Honey Cake

Ingredients
- 1 cup of brown sugar (150 grams)
- 3 large eggs (room temp)
- ¾ cup of neutral oil (188 mL) – avocado, grapeseed or canola
- 1 cup of honey (250 mL)
- 2½ cups of all-purpose flour (385 grams)
- 2 teaspoons cinnamon (6 grams)
- ¾ tablespoon baking powder (10 grams)
- 1 teaspoon baking soda (6 grams)
- 1 cup (250 mL) strong black tea (Earl Grey or English Breakfast, regular or decaf)
- ½ cup of sliced raw almonds

Method
- Prepare the Tea: Brew one cup of tea using two tea bags. Let it steep until dark in colour, then set aside to cool.
- Whisk the Eggs and Sugar: In a large mixing bowl, whisk the eggs until frothy. Gradually add the brown sugar, whisking continuously until well combined.
- Add Oil and Honey: Measure the oil and honey. Start by pouring the oil into a measuring cup, then add the honey (the oil helps the honey slide out easily). Gradually whisk the oil into the egg mixture, followed by the honey.
- Mix Dry Ingredients: Sift the flour directly into the bowl with the wet ingredients and mix until just combined. Sift in the baking powder, baking soda, and cinnamon. Mix thoroughly to ensure everything is well incorporated.
- Incorporate the Tea: Slowly pour the cooled tea into the batter, mixing gently until the batter is smooth.
- Prepare the Baking Pan: Grease your chosen cake pan(s) with non-stick spray (round, square, or loaf pans). Pour the batter into the prepared pan(s), then tap the pan on the counter a few times to release any air bubbles.
- Add Toppings: Evenly sprinkle the sliced almonds over the top of the batter.
- Bake: Preheat your oven to 350°F (175°C). Bake for 35 to 40 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Cool and Drizzle: Let the cake cool. Drizzle honey or brush melted honey on top before serving.
- Optional (Add Nuts): If you like nuts in your cake, fold half cup of chopped nuts of your choice into the batter before baking.
