Dreamy Strawberry Fudge

Yes, dessert can be healthy too! Made with just three ingredients, this Dreamy Strawberry Fudge recipe is vegan, gluten / dairy-free, does not need to be baked, and is super-easy!

Freezer Time: 3-4 hours
Yield: 4 Servings

 

Ingredients

  • Chopped chunks and slices of strawberries
  • 240-300 grams 70% dark chocolate
  • 1-2 tablespoons of extra virgin olive oil


Method

  1. Line a medium-sized, rectanular, glass dish with parchment paper.
  2. In a small pot, melt the dark chocolate with the olive oil (using olive oil instead of butter gives the rich chewy and fudgey texture to the mixture).
  3.  

    Place strawberry chunks in a single layer in the paper-lined glass dish.

  4. Pour chocolate mixture over the strawberries, and add strawberry slices on top.
  5. Refrigerate for one hour, lift paper out of glass dish, and cut slab into chunks – however you like, and enjoy!
  6. Keep in fridge once it’s set.
